Love, love, love this salad. It’s sweet, it’s healthy, it’s filling, and it is great by itself or as a side. During the summer time I usually have all the ingredients on hand, so all it takes is a bit of chopping.
2 small broccoli crowns chopped, 1/2 cup fresh shredded carrot, 1 cup sliced red grapes, 1 cucumber (I like lemon-cucumber hen it’s in season) peeled and chopped, 1/3 cup raisins, 1 avocado chopped
Equal parts mayo and red wine vinegar. and about 3 tbs sugar, or sweetener of your choice to taste
(ok that part isn’t super healthy, but you have to live a little)
